One-Pan Lemon Herb Salmon & Asparagus
Yields: 2 servings Prep time: 10 minutes Cook time: 15-20 minutes
Ingredients:
- 2 salmon fillets (about 6 oz / 170g each)
- 1 bunch of fresh asparagus, tough ends trimmed
- 2 tablespoons olive oil, divided
- 2 cloves garlic, minced
- 1 lemon, half sliced, half juiced
- 2 tablespoons fresh dill or parsley, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
- Preheat Oven: Preheat your oven to $200^{\circ}$C ($400^{\circ}$F). Line a large baking sheet with parchment paper for the easiest cleanup.
- Prep Asparagus: Place the trimmed asparagus on the baking sheet. Drizzle with 1 tablespoon of olive oil, salt, and pepper, and toss to coat. Arrange them in a single layer on one side of the pan.
- Prep Salmon: Pat the salmon fillets dry with a paper towel. Place them on the other side of the baking sheet. Drizzle the remaining 1 tablespoon of olive oil over the top.
- Add Flavour: In a small bowl, mix together the minced garlic, chopped dill (or parsley), and the juice from half a lemon. Spoon this mixture evenly over the salmon fillets.
- Bake: Top each fillet with a few slices of lemon. Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the salmon is opaque and flakes easily with a fork and the asparagus is tender.
- Serve: Serve immediately, garnished with a little extra fresh dill if desired.
